Welcome back to where everybody knows your name. Today I am very excited to drop this bonus episode with one of the world's greatest chefs, Renee Redzeppi.

Renee is a co-founding head chef of the three Michelin-starred restaurant, Noma, in Copenhagen.

It's no overstatement to say that Noma has changed the global dining scene

through their creative use of Nordic ingredients. Renee recently starred in a new Apple TV Plus series

called Omnivore, which explores the ingredients that built societies and changed human history.

I highly encourage you to check it out.

I was fascinated when I watched it the other day.

So glad Renee could join me remotely from Kyoto,

where his restaurant Noma has been doing a residency.
