0:41.4 | And chlorophyll is part of something called photosynthesis, where it's taking sunlight |

0:48.3 | So at the end of the summer, we have a spike of a certain antioxidant called antocyonin. |
0:54.6 | Okay, this compound gives the leaf its red or purple or even a blue color. |
1:00.3 | It's in currents, eggplant, it's in oranges, blackberries, cherries, grapes. |
1:05.8 | It's there is a pigment and an antioxidant to protect the leaf or the plant from extreme |

1:12.9 | But it's very dependent on the pH. |
1:15.9 | So when the pH is like three, which is very acidic, it'll be more red. |
1:20.3 | In 7 and 8, which is more neutral and slightly basic, it turns violet. |
1:25.0 | And as it goes up to 11, which is extremely alkaline, it turns the color of blue. |
1:30.5 | Then we have the antioxidant called carotenoids, which are yellow, red, and orange. |
1:35.8 | There are over 1100 different carotenoids. |
1:39.6 | One being luteine, which is good for the macular bi or xanthanine, which is good for the brain |
1:45.4 | for memory. |
1:46.5 | Now as it gets colder, you get a spike in tannins, which give the color of brown. |
